Changing steering wheel

The cruise control switch does not have to be on the steering wheel to work.
You can take the switch out of the old wheel, install it wherever is convenient for you and make a wire harness from there that will reach the connector plug on the steering column.
There's only 3 wires so it shouldn't be a problem. Finding a place to put the switch that wouldn't be in the way but allow it to be functional, well that would be a problem. Maybe in the center console sideways and next to the parking brake handle.

OP: You'll need to tap the wires that lead to the ring terminal, and route them accordingly to the switch. Ain't that hard, but the switch connector wires probably won't be noted in the FSM. It's kind of like the Bose amps, it will only show the chassis wiring colors until it hits certain connectors. Hard to explain, but I'll bet that's the case with that switch. So basically it will tell you which wires lead to the ring terminal, but it won't tell you the switch connector color it goes to, but it will show the pin locations. Sounds more complicated than it is, but once you know the pin locations you've got all the info you need.

So when you push the CC button to the left of the wheel how do you then actually engage your CC?
