Is it bad if I put together the wrong fronts and backs of the calipers?(like if they are swaped)
How much do these stick out compared to regular calipers. I want to know if these will fit under my wheels.

They stick out probably a full inch, maybe more, than your stock calipers. If you really want to test it just take a wheel off and unbolt the stock caliper and bolt on the 300ZX caliper and see.

By the way, I have Racing Hart C2 style wheels.
The design of the wheel itself is a big factor. I have 17x8 rims with 30-32mm offset and the 300z brakes will fit w/o no spacers easy. It's because the spokes "flare" out. Not in. Koenig Tantrums do well for this also.

R34 calipers will bolt up as well but they are even bigge than 300ZX calipers thus even more fitment issues than with 300ZX calipers. I'm sure R32 and R33 calipers will work as well with the same considerations. How much can you get any of the above calipers for is the question though. At some point it may become more cost effective to just get an aftermarket kit.
mb1 just bolt on one of the calipers and use some washers to space it you, measure how much space you need to clear your spokes and viola, you know what size spacer you need. Every single wheel will need a different size spacer so no one can tell you what size you will need. I personally need to go about 11mm out to fit under my K1s. I am making my own spacers by using a plasma cutter to cut the "hat" off my old stock sized brake rotors. If you think about what a spacer is, it's just a circular piece of metal of a certain thickness with holes drilled for your lug studs. An old brake hat will work like a charm, of course you have to get it of a uniform thickness or else you would have crazy vibrating problems.

Loren has Skyline (R32) calipers/rotors, and they stop on a dime. I felt a HUGE difference between his car and my own with OEM size slotted rotors and Axxis Metal Masters. https://maxima.org/maxfaqs/sub_brake...shtml#Brakes_3
Like Neal said though, it's more about pricing/availability, ease of installation, and clearance.
