What effect does running "one step colder" plugs have on a N/A motor? Does it affect MPG, performance, longevity?

If you engine doesn't need it due to pinging,detonation, etc... Don't use them. You gain NOTHING and may get fouling of the plugs which leads to...

I heard that "one step colder" works better with boosted cars rather than unboosted cars.

I haven't heard, but I have used both 1 step and 2 steps colder N/A and noticed no degradation in performance.

I did it because I use nitrous but I wouldn't recommend changing from the standard unless you have a specific reason.

Previous owner installed nitrous but pulled it due to a ticket. He left the plugs in there.
