would 16*8 rims fit a max?

 

Yes, depending on the tire size. I have 18x8's on my car.

 

I had 8" wide with +40 offset. No problems at all. Now I have 9" wide with +40 in the rear also no problems.

the ones I'm lookin at are 16*8 +30 offset and the tires are 215-55-16

 

215 on an 8? Won't that give you a very "stretched" look to your tires? And expose a lot of the rims' area where the tire gets tucked behind?

 

I would ditch those tires and get some wider 235/50 's. The offset is fairly agressive and should look excellent (flush with fenders).

 

Yeah, I have 16*8.5s, with I think a 30mm offset. Not sure on the offset though. They fit fine, stick out of the fenders just a TINY bit, not really noticeable, and I have no rubbing issues with 245/45-16, lowered ~1.7" or so.
