how much wight can i eliminate ?
depends. if you daily it, i wouldnt go further than a CF trunk and hood. maybe lighter wheels. if its not a daily, you can remove the back seat, remove the spare tire, CF hood/trunk, remove the door panels, etc
honestly for what the back seat and door panels weigh its not worth it, i would just do CF parts and wheels

then at that point i would look into light wheels, carbon fiber body panels, and gut the interior. keeping in mind gutting the interior looses only a few pounds, only necessary if you need to shave milliseconds off a quarter mile time. spare tire i would keep, its kinda necessary if you daily it
there is a huge thread listing the weights of tons of components from someone who went through and gutted their car and weighed everything. search for it, should be pretty easy to find.
obviously you will be faster with a lighter car but it's not very difficult to get into the 13s without gutting.
