Does anyone use 225/45/18 tires? I bought 18x7.5 40mm offset wheels and 225/40/18 does not have a high enough load rating so I have to use another size tire.

It's okay to get tires with slightly less load rating. But if you're worried, try 235/40/18.

I've been reading they won't fit on 18x7.5 wheels.

Dude, no they're just fine. I've seen dozens of people put 235/45/17 on OEM 17x7 wheels. Trust me.... 235/40/18 is good to go.
