what do you guys use to loosen the big rear strut insert nut?

You know, that big flat one hat holds the strut insert in? Do you just buy the factory tool? My factory service manual shows it as a simple tool, should be relatively cheap. Sorry, I don't have an adjustable wrench with a 4" span, although I'm sure that'll work

what I used was simply a huge pipe wrench.
clamp the bottom of the strut in a vice, and have a helper brace the strut while you loosen the gland packing nut. (that's what it's called, FYI.

loosening the first ones will be a real PIA if they haven't ever been done before.. you'll most likely need a helper. also be sure to spray plenty of liquid wrench or wd-40 on it about 10-15 minutes before you're ready to tear them down. it will help immensely.

matt has a good idea there . the pipe wrench is going to be cheaper than the factory tool. you should be able to find a cheap on for less than $20
