How long should the rad fans stay on?

Before: My fans wouldn't turn on. I discovered by moving the wires around by the temperature coolant sensor that I could get it started. This would automatically turn on the fans. But the next time I used the car they wouldn't turn on and so I had to move the wires to get it started again.

Now: I changed the temperature coolant sensor and secured the wires around it because my previous technique wasn't working. I started the car and let it run for 10 minutes, 15, 20... The temperature stayed the same the whole time. But then the fans came on and ran for about 30 seconds and then turned off. Then they stayed off for a few minutes and turned on again for about 45 seconds.

The car was running for about 30 minutes and the temperature never moved, good thing, it stayed in the middle.

Is this normal behavior for radiator fans? I wouldn't know because I've never had mines work properly. Are they suppose to come on and off intermittently? Or when they come on are they supposed to stay on for a while?
