i am not 100% sure on what the 3rd gen controls are like but every other infiniti/nissan i have driven it goes something like this.

Turn on cruise control. (there is either a button on the dash or in the cruise control area which turns the cruise control on/off)

once that is done hit "set/decel"

from there hold "resume/accel" to speed up or "set/decel" to slow down

To exit cruise control hit either the brakes, clutch if you have one the cancel button or both the "set/decel" and "resume/accel" buttons at the same time. cruise control also wont work under 25mph

Push the cruise button on the dash to the left with your left hand. While holding it down, press the "Set Cruise" button on the steering wheel with your right hand thumb. Look for the blue light to go on. Also, you need to drive over 25mph to get it working. I think this is normal for most car.

You can also turn it off by stepping on the gas pedal too. A lot of ways to play around with it.

Are you sure about that last statement?
I do believe stepping on the gas pedal will let you accelerate, but as you release it you will go back to the set cruise speed.

not really necessary, unless my car is totally jacked, I have always hit the button, put the hand back on the steering wheel. at my convenience (seconds, to hours, depending on where I am driving, I can turn it on.

no... not really.
you can use the gas pedal like normal, to pass cars while cruising.
I have never found a pattern of tapping the gas, flooring it, or what-not to turn it off.
cruise control will also NOT turn off when popping your 5 speed out of gear without the clutch. yeah, the car won't maintain speed, but your engine will REV!

well, as long as he is operating the correct pedal, its fine.
heck, half the time, I have to think about which way is left, and which is right. but I have no problem picking up the pen with my right hand. or which is brake and which is clutch on my motorcycle.
