How much to cut off is purely based on your personal taste, if you are adding a threadless **** you can just cut it yourself no need for welding the thread back on. I cut mine bit by bit a total of three times (approx 2") and changed the **** twice (some ***** longer than others). The **** in the pic is a Momo carbon which was much taller than my previous aftermarket one so I had to cut off a little more to get the height I liked. Better to cut off too little and cut again than to cut too much!

Also, $10? It will take YOU at most 25 minutes, provided you can get your hands on:
1) a metal saw
2) a metal grinder of some sort (I did it with a manual grinder, more precise than an electric)
...after that, all you do is forcefully screw the stock shift **** back onto the newly-grinded shift lever. Some think one ought to drill inside the OEM ****, but that's not true. The inner plastic (or whatever it is) is soft enough and should screw on flawlessly. Mine sits so tight that I actually tried to yank it off with all might and couldn't.
