need some adivce my temp
that just happened to me, after changing the water pump, both hoses, the thermostat, I took out the radiator and had it rodded out, well the guy at the radiator told me that he could not stick the rods in the radiator because it was so clogged, so I bought a brand new steel radiator for $150 out the door and problem was finally solved!!!!!
I really think its your radiator, I went through the same thing, temp would be consistent until I turned on the AC, then the guage goes to like 3/4's !!! Scared the hell out of me!!!! My fans worked normally too. I stuck a meter to measure the temps and I had cold spots in the radiator, thats an indication of something clogged.

I would take your radiator out yourself,(its very easy) take it to a local radiator shop and see if they can rod it out forusually about $75 or so, if they can, your problem is solved, if they can't, you will need a new radiator. get a steel radiator, usually sells for about $135 I got mine for $150 out the door.
