Which one is better? I'm trying to fix up my 95 Maxima for performance. Please give me your opinions, thanks.

My preference for performance (along with many other .Org members):
1. Full coilovers
2. Springs / Struts
3. 1/2 Coilovers

what's the difference between shocks/springs and coil overs? I know shocks can be adjusted from soft to stiff and coil overs can adjust height (??) right?

Yes, that's right. Some shocks (for us Konis Adjustables and KYB AGXs) you can adjust the ride quality on, and all full coilovers you can adjust ride height, quality, and many other things as well on.
