Water temp sender location?

I used the Omori "adaptor" to hold the sender.

I have a thermostat that is supposed to thread into some location ont he engine. I'll prolly just get a piece of metal pipe that fits tight inside the upper hose (hot water to rad), and get a nut that matches the metal pipe. Then I just drill a hole in the pipe and weld the nut onto it so that the sensor screws into place and is in the coolant flow. As long as I make sure the weld is watertight and the hose is held solid onto the metal tube it should work out just fine.
Right now I just have the fans running constantly... The engine runs waaay too cool all the time and hardly ever gets up to normal temp.
