There are two distinct sounds:
1) Engine parts cooling. Sounds like clicking and it will do it for several minutes.
2) One distinct click. My 2000 does this too. You don't have to turn the car on to have it happen - merely turn the key one click short of ignition, then when you turn the car off again you hear this single click from the engine compartment. I asked about this before and it's perfectly normal. It's a solenoid or something...but in any case don't worry about it.

does it go click click click click click...? i have that type of sound and i think it has something to do with the starter. I used to have that sound, then my starter died. I replaced my starter and the sound went away, but now the sound is slowly coming back. This might be coincidental though.
That clicking soung is most likely the trottle bypass valve closing when you turn off the ignition. When the trottle is closed, the bypass valve opens to allow the engine to idle. This valve is what controls the idle speed.
