Is there any getting around cutting off these nuts?

Is there any getting around cutting off these nuts?
About a half a year ago, I installed my FSTB, and realized I needed to fit washers underneath the FSTB brackets in order to have the bar comfortably clear the engine. When reinstalling the FSTB, and torquing the Strut Mount nuts to spec, two of the six stripped. Besides cutting them off and replacing the bracket, is there any way of getting these nuts off?

You can see which ones I'm talking about. (not my car)
My current plan is getting my power drill and a cutting wheel and cutting those two nuts off, and then replacing the bracket and nuts when installing my suspension over spring break. Are there any other suggestions?

Ok, I realized that my explaination of what the "stripped nut" has led to some confusion. By "stripped", I meant that the nut spins freely on the stud. The hex on the nut is completely fine, but the nut spins freely both to the right and to the left. Is there any way around this?
