I would take anything you can get your hands on.
Worst case scenario is you have to turn around and throw them in the garbage yourself.
Best case scenario is you can use parts for your own vehicles or sell them/trade them.
A lot of older BMW and Porsche owners (and likely VW owners) probably use newer OEM parts to "upgrade" theirs. Kind of like if a 300z owners upgrade their brakes to Wilwoods and we can use their stock brakes to upgrade on a Maxima or how 5th gen wheels look great on 3rd gens, but very few 5th genners stay with stock wheels.
I guess it would depend on the parts and application, but if you grab the stuff, you can research it later on. Just start hitting forums of vehicles your shop works on and find out what you can.

take them buddy. those parts are worth a lot of money. i just recently programmed an '07 BMW 530i that got vandalized and recovered by the insurance that a bunch of parts had to be swapped out and im getting my hands on a new set of dynamic xenon headlights but will sell them as a complete unit. so get your hands on whatever you can.
Also
Craigs list is a great place to sell those types of things too. Even if a part sits around for a few mos. the it like found money when someone calls you outta the blue for stuff. A storage unit will more than pay for itself if you don't have space for all them free parts. You'll be surprised at how fast you cell number becomes a hot item.
Be sure the parts are trash, since you are one of the persons suppling the trash pile. It could bite you because of possible conflict. Maybe have your boss OK your digging in writing.
I did a similar thing with used computers from companies I contracted to. But I cleaned them up, loaded new OS and tools and gave them to charities and people who could not afford them.
Other wise make some money.
