Hm I saw a list of stuff you can do for weight reduction around here a while ago. I'll see if I can dig it up.

So your saying you cant take the second seat out of say a Porsche GT2 RS without it being illegal? Its a track car but a production car at the same time... I dont see any logic in a law like that.
Hawaii has a safety inspection requirement. It is illegal if the car came with devices and then was removed later.
On the island of Oahu, they have the reconstruction law in their county, which is a lot more stringent than the state safety inspection. The reconstruction law is for modified vehicles.
Oh yeah also, Hawaii has some stupid laws, or at least one stupid law. It is legal in the state to remove the catalytic converter on any automobile, irregardless of the year manufactured.
But federal law supercedes state law, so we are still required to have the catalytic converter anyway.

Whatever you take out can always be put back in. Do you know how many people remove the rear seat for reduction in weight?
This reminds me of a few years ago someone knocked off a crazy amount of weight by removing anything possible (I believe it was an altima). It was pretty cool, but the car looks ridiculously stripped when it was done.

What class are you planning to run in? IIRC, removing seats will push you into at least Street Prepared. Unless you have some performance mods, you may be better matched leaving the seats in and running in a lower class.
Now that I've read your comment and a bit of research, you make more sense and that I should keep my seats intact. Plus, I did a test run without my rear and passenger seats and OMG I couldn't bear the road noise I've experienced.
Thank you! Yeah, I was surprised how light the rear seats were at the time of removal.
