Shifting and overdrive?

Two questions:

First: When I should be doing my "light driving" to increase gas mileage, this means shifting at 3000< right?

Second: Should I use my 5th gear for an overdrive, or when I am cruising the streets is it ok to have it in 5th and have the RPM at 2000-2500?

Thanks,
Pickwick

(P.S. When in race mode, where is the optimal shift point? Is it different for each car? I only have a K&N drop in filter, plus two custom maxima stickers)
