Offset refers to the amount (in millimeters) that the hub(?) of the rim is set forward or backward from the true centerline of the wheel.
Basically - the higher the offset number compared to stock, the hub of that wheel set more forward and therefore the wheel will be tucked in more inside the fenders. Conversely , the lower the offset, the more your wheels will stick out. Don't quote me - but the stock offset on Maxima wheels I believe is around 34mm.

Except for the stock offset. At least on the 16in SE rims the offset is 45mm, which is why they looked so tucked in. Most rims look flush on the maxima at between 35-40mm offset.
