Which Offset for 18" Rims?

I'm buying 18 X 7.5 rims w/ 235/40/18 tires. Offsets available are 35, 38, 43. Which offset should I go w/?

I also would go +38. But IMO, I would also get at least 8" wide.

38-40mm, they're probably the same.

Agreed. But make sure you try them on the car first before mounting tires on them. According to how the lip (or mounting bead) is made will determine how they will fit, especially in the front on the strut side. Personal experience, my 8.5" Volk's are pretty tight, but clear OK.

Rims I want to get don't come in 8". Max size is 18X7.5 Better off looking for something else or just go w/ the 7.5?

Why do you recommend getting at least 8"?

As the wheels get wider, you generally get better handling. But I think 18x7.5 is okay. I've seen 19x7 wheels, now those are skinny!
