1) if it does this at idle, then you need to clean the contacts to your cylinder head temp sensor.
2) if it does it while driving, you should adjust your throttle position switch.

WHen warm, pull the harness off. Roll the sensor down (end with harness hookup). PUt your meter to the top two terminals inside the switch. Have a buddy hold the idle at 200-300 rpm over idle speed. Roll the sensor back up slowly till you get continuity between the top two terminals. Tighten the screws and you're done. Haynes manuals should tell how to do this also.
If you take it to a shop and they want you to buy a new switch, they're probably idiots and wouldn't know how to set the new one if you bought it for them, and your problem would still exist.
