Max Tire Width on Standard 91SE rims?
They should fit fine.
If you want to be sure, reach behind each tire and make sure you have anough room for the extra width. Since you're going from 205 to 215 you're going to need room for an extra 5mm on each side. If you can run your finger around the back of the tire without touching anything you have plenty of space. Be sure to do this with the front wheels pointing straight and turned.
Keep in mind that your speedo will be reading 1.3% faster than your actual speed because the tire size you're selecting has a slightly smaller circumference.

In reply to go_speed_go's comment about the speedo, you can pretty much not worry about it. The speedo on 3rd gen Maxes GENERALLY run about 5% lower than what you're actually driving. with the 205/65 on my stock rims, I went through one of those side-of-the-road-radar-box thingies.. my speedo said 85, the radar said 79/80.
I had some 215/60 tires on the same rims for a short while, and when I went through the same radar, it read 80/81-given an 85 on my speedo.
When I switched to 16" rims and 225/50 tires, it still said 79/80.
As long as you stick with a typical tire- 215/65 or 205/60, you'll be fine.
Clearance will be no problem at all, as that's what most people run on their SE or GXE rims anymore.

actually...
I used to characterize the 3rd generation speedometers just like you do (5% lower). On my white 91 SE, that is exactly how it would measure with 215/60's. However, when I bought my black one, it registers right on the money with the same tires. Go figure.

I installed new 15x7 Eagle 5 spoke polished rims and used 225/60-15 BF Goodrich VR4s. Fits very well, no rubbing and much better traction, very little sidewall rollover. Overall rolling diameter was only .2 inches more than stock 205/65 size, per tire spec sheet.
