O2 Sensor & Knock Sensor

Here's the senario. Commute 750 miles a week, 90% highway. Averaging about 350miles/tank and filling the tank with 15 gallons of 93 octane. Trying to improve on gas mileage I believe I have the knock sensor problem due to very poor acceleration once the car has warmed up and since the car has 95k miles on it the O2 sensor probably needs replacement.
Is there anyway to test O2 sensor to determine whether it needs replacement?

Would a bad knock sensor hurt gas mileage?

I plan on replacing knock sensor but would hate to replace it and still be getting poor gas mileage even though it would be accelerating faster. Also would bad vtcs hurt gas mileage as well?

TIA,

Henri
