I think the general consensus is that you have 2-3 gallons left when the light comes on.

You don't want to push it. I think in my first Maxima I went about 70 miles (on the freeway) with the fuel light on and it didn't run out of gas. I was pretty scared, though. I was trying to make it through an area of super high gas prices and I was low on money. Looking back, I really should have stopped and put in a few bucks worth.
I am not suggesting you try to see how far you can go, I am just telling of my own personal experience.

Depends on what you mean by "fill". If you wait until the gas stops pumping, that's "full". If you keep pumping gas until it almost overflows, that's "overfull" - which is bad, as then the gas system cannot "breathe" properly.
The gas tank is 70 liters or approx 18.5 US gallons (15.5 Imperial gallons). That's for the tank alone - the filler tube is not included, but without measuring it, is approx 1-2 gallons. The gas light is going to come on with around 2-4 gallons left in the tank.
BIG NOTE: For fuel injected engines, you are advised against constantly running very low or completely out of gas, as the sediment will seriously damage the fuel pump. However, in these times of high & fluctuating gas prices (thank BS-Bush for that one...), am guessing most of us drive until we're almost empty.
NB: to any Replubican voters who feel offended, will apologize now.

when mine comes on, Wait mine doesn't come on!
and the low fuel issue is not so much sediment in the tank as it is overheating the pump. the dasoline acts as coolant when the pump is submerged.

i know the max is sopose to have an 18gallon tank but i ran out of gas once. walked to the gas station bought a 1gallon container put that in then drove about a 1/4mile to the gas station and filled it up and it only took 16 gallons so im not sure why i would run out with at least 1 gallon still in the tank
my gas light doesnt work either so i just fill it up when im at the bottom of the last mark and it ussually takes 15 to 16 gallons
the most ive ever fit without running out of gas is 16.5 gallons and that was at a gas station on a slight hill

I have managed 30 US mpg on a long distance drive, though.

Because you're constantly filling & draining the tank, and because even humid air doesn't really "sweat" in the gas tank, you're very unlikely to have water droplets attach to the metal surfaces long enough for there to be a corrosion issue.
Your gas tank is more likely to rust from the outside in, especially if the undersealant is damaged and dirt builds up.

I have drove over 60 miles on my gas light before. I was in the middle of no ware in TN and the light came on and I knew that I could go 40miles on it but then still no gas station and I push it to 62 miles before I got to one.
