coolant reservoir
I stopped to get gas and I heard a noise coming from my car but I did not check it out, then about 10 mins later, I saw a small amount of smoke coming from under the hood. It was the AF in the coolant reservoir boiling and the car is overheating badly. I did not know AF could boil what can cause this? I have a new T stat in.

Water pump went bad on my VG a while back (8 years ago?) while i was on the highway. Darn Shame.
If it is your waterpump, spare no expense and get it and the timing belt replaced while you are in there.

I would say you have a bunch of air pockets in the cooling system when you changed the t stat...Bleed out the air and then report back....

You need to check your entire cooling system. It will either be your water pump, t-stat or radiator.
This happened to my dads truck, all of the coolant overflowed out of the bucket and on to the ground. We were at the river along ways from home. He took the t-stat completely out, that didnt fix it. Then we popped the radiator cap, it was flowing through nicely. So after a long ride home, full of stops, we switched out the water pump and it was good to go.

I had that same problem and it was my T-Stat, I changed it out and the overheating went away.
I have a new problem now. About a day ago my fans for the radiator stayed on for a long time when I cranked it up in the am, then they just went off.
I am starting to see my temp needle get higher than usual at idle speed, so I changed out the temp control unit after troubleshooting the wiring, all the fuses looked good. My fans are not working at idle speed and this is when I see the slight increase in temp. If I turn the AC on the fans work properly, they are just not functioning at idle speed. How long should it be before they turn on at idle speed?

You might just have a faulty radiator cap!
Realize since the radiator overflowed that you will now be low on coolant, and you will have to bleed out the air.
