Dont get the "laser" LEDs, there are normal ones that have a decent spread... but by design all LED bulbs will shine on spot.
What exactly is the purpose of this mutilation? There is very little momentum to be gained from shooting photons out the rear, so dont count on seeing any extra acceleration. If you give me the center frequency and lumen rating I'll calculate it for you.

The cops will love that.
red would be one of your only legal options.... but blue, white (unless only in reverse), yellow (unless with blinker) and orange are illegal....unless it's different in your state.
hmmm Im using white lights on my corners... and to me its kinda blue from my smoked corners. Im thinking of switching to Amber/Orange LED's in my corners.
You know how they say, "She looked good, until she opened her mouth" lmao, thats what i say about my car... "It looked good until I turn on my lights" ahah

i was talking only about whats not allowed in the rear.....the only visible colors allowed in the rear are red (full-time), amber* (signals), and white (reverse only)
the front you can have white anywhere, amber* turn signals and/or running/parking lights, but TECHNICALLY no red, blue, green, etc.....but you typically wont get in trouble for it without breaking the law in some other way first.
I ran red corners for almost 2 years before i was pulled over for no muffler, and they mentioned the red corners.....but i had been pulled over with them before and never got told anything about them.
(I'm no expert, but this is the way i understand it all....i had a talk with a cop friend of mine about a week ago about my interior lights, and he explained it all to me in a nutshell.)

LEDs don't take all that much power. I guess you could just take a whole bunch of them, drill a bunch of holes through the black plastick back of the reflector plate, and stick all those LEDs into them. Kind of like the break and back lights on most of the newer cars. If you don't spread em too much, you should get a nice diffusion that will take up the whole plate. I've seem some other car brands have that, so it can't be illegal.
I've done many LED projects of all types. The shopping choices depend on what brightness and diameter you're going for, I could point you in the right direction when you eventually continue your project.
