If I take my EGT probe out of the exhaust manifold, there would be hole there. What do I fill that hole up with?

A grade 8 (or class 12.9) bolt.

But the best bet would be to have it welded closed.

As I remember, it is 1/8" NPT. Just get a plug from any parts store (ie. Lowes or Home Depot), screw it in, and have it spot welded. Or just get the whole itself welded.

Yes it's a 1/8 NPT. So do you guys think if I put a 1/8 NPT plug in there just for the time being, and have the hole welded in later on, should be ok?

Yes, but definitely plan on getting the hole welded.
