Does anyone have any idea if we can find out how long our injector pulse width is at various rpms and throttle percentages? After learning about the fuel system I've been curious to learn more about the injector pulse width, and this would also be a good way to figure out how to get the best gas mileage.

You can see how much fuel you're flowing at a given throttle % (from the fuel PSI, rpms, and injector pulse width), and determine at what rpm to shift at based on your throttle. I should be getting an Apexi SAFC II soon, so the only information missing is the pulse width.
