Is it possible to make the over head lights bright white, like LED?

Can you just unscrew the current bulb and put a brighter one in or does there need to be more modification than that?

I'm guessing you're talking about the funny shaped grenade looking bulb in the map light, not the dome light. Just push down on it and twist it out, not screw.

I've seen mood versions of it where you can make it red, blue, green, etc. but nothing to make it brighter.

The only way would be to do an LED conversion like the write-up in the How-to's where you drill a bunch of little holes and put LED's in the holes.
