Removing door skins is not something your average home mechanic should be doing. If you have to ask a question like that, you're best off leaving this to a professional autobody mechanic.
I only know a little about the process, but it's my understanding that you only remove a door skin to replace it with a new one. You have to cut (grind) the edge of the skin to remove it, thereby rendering the skin useless.
