My check engine light is on and one of the codes is my MAP sensor. Will CAI cause this? What about monkeying with my intake by adding a K&N filter, cutting holes in the filter box, and removing the little plastic air reservoir?

 

Make sure you didn't unplug your ATS (air temp sensor) this will cause the CEL to come on. The mods you mentioned shouldn't cause the MAP sensor to fault.
