Pealing-out

Could be a variety of problems. If you've got a CEL check the codes and see if you get a knock sensor fault. If so, that's your problem, your knock sensor's gone bad, and your ECU is bottlenecking the power of your engine.
Otherwise, maybe you're using a lower octane gas or maybe you got new tires. No one can really tell unless you give us more info.

I have used 93 since i got the car over a year ago, I have 2.5inch header-back exhaust with no cat, intake, no codes but the rear o2 code, and still have a hard time peeling out.

O2 does not affect power under heavy load. Leave it alone unless you're getting an o2 sensor code, in which case fixing it will probably still not improve power.
Definitely check for ecu codes - there are some codes like the knock sensor that don't set the light.
Knock sensor may have some effect, if you check for codes and find a knock sensor code, all by itself, I would replace it. But not until it's the only code and it keeps coming up when running premium fuel.
Lower octane gas will not change power output unless the ecu has detected knock and adjusting the timing. That's the purpose of the knock sensor - in which case you should switch back to higher octane fuel and reset the ecu. If you don't get any ecu codes, it's not happening.
Grippy tires will give you more traction. You will be able to launch faster because it's harder to get wheelspin. As well, in summer the temps make the tire softer and more grippy then in colder temperatures. So in winter it's fairly easy to do no matter what tire you have.

theres no reason to try and peel out with an a/t. That said when i left the house mad the other day (i know, i was being an ***) i punched it and my auto spun first and second, and chirped when it hit third. So they CAN, but why bother trying?
