When I was installing new leather interior I glued leather door inserts over the existing cloth. It's much easier and looks better.
Just my .02 cents.

Well, the place where I got my interior (www.leatherseats.com) actually recommends keeping the cloth insert and glue vinyl or leather over it. Just make sure you measure everything before cutting the vinyl.
Yes, the edges look smooth, you won't even know there's cloth underneath.

It's true! When I saw his car, I didn't know there was cloth still there. Until now!
