When I replaced my knock sensor, I checked the ohms on the new one, which I bought at Nissan. It measured 560K ohms (or .56 meg ohms).
If the plastic housing on the knock sensor is cracked, you may very well be getting an open (infinity) reading. I took the old one apart and was surprised that the connection to the core of the sensor is just pressed against the core, held tight by the plastic case. So if the case cracks, which seems to happen a lot, it's new sensor time.
