I have one.
Innovate had a dual gauge that shows voltage and water temp so I installed that with my AFR in a dual gauge A-pillar pod purchased from a part out.

I went to Z1 online and ordered an adapter to put on the hose that held the sensor.
I believe most just use an OEM spot though, but I wanted to leave it alone.

I sort of had the same on my 5.5 gen. Used the ECU signal wire from the VSS, ECT, MAF, RPM and IAT (2 speed signals, and three 0-5v inputs). Tapped the ECU wires, and used the FSM for voltage/hertz to whatever unit conversion curve and it was actually quite swell. Doing just the ECT should be easy, as FJF said.
