i can do it on other cars, but in my own car, i gotta use two hands like grandpa. maybe i'm just weak?

Nope... i'm good now... i couldn't do it in the winter (by the time I walked to my garage, my hands were usually frozen, and they would slide on the wheel)... now, i can do it without a prob... (at low speeds, you have full power-assist steering)
Patience grasshopper...

I can make turns with one hand (actually, 2 fingers pointing straight out), but can't use my palm because my hand is never sweaty enough to stick to the steering wheel.

Well, you have obviously given this considerable thought... therefore I must agree that 2 fingers is the sweet spot.

Turning Radius
(My 1st post - have owned blue pearl GLE for 10 days):
In researching data for 3 cars I was considering in addition to Max, I believe Max had a smaller turning radius than Accord & Camry, not sure about Passat. But it feels like Max has wider radius than my '98 Grand Prix GT,which also has 16" wheels. Also, it feels like the GP corners a lot better, but I assume the difference would be narrower or non-existent if I had the SE.
2 little things I've noticed missing on my car which Nissan should have included - lighted steering wheel controls, & a warning sound when light switch is left in on position & car is turned off & door opened. I know the lights turn off automatically, but the next time I drive they come back on, & I don't always notice. (The reason I manually turn 'em on in the 1st place is that MN law requires lights on in rain or snow, & rain has been pretty much the standard weather condition in Mpls since I got my new Max). Otherwise, great car, even with the Toyos, which were on my '92 Max SE as well.

I turn my lights on in the daytime for "June gloom", so I know the problem you're having -- just look at the clock though. If it's barely readable in the daytime, your lights are on.
