2003 low/intermittent performance high milage

Have a 2003 with 150000 that I just picked up
Car is in great shape and everything works.

The performance is all over the place. It hesitates often and sometimes its smooth but seriously down on power.
No codes

Most mornings it rips(cold) then it just goes bla after warming up.
All I've done is clean maf and an ecu reset but there was no improvement

Took car for a longer trip and the car was hesitating bad and no power really.
An odd observation (test) was I shut the car off and started the car again and the car came alive for the rest of the trip.
Part throttle the car was faster than I've experienced in the 2 weeks of driving it.

I searched a lot on maf issues and knock sensor issues.
I'm baffled as to what to look at first.

With this milage I expect there's a lot of things on their way out. Cats are probably clogged and plugs.... List goes on

But the fact the car intermittently will rip has me wondering.

Any insight?

hesitation

First thing to do is to hook up your vehicle to OBD scan tool with live feed, to check for error code and impending error code. Pull out the PCV tubing attached to the intake manifold, check for presence of oil inside the tube. If present you need to install a PCV oil catcher. VQ35DE engine has a tapered piston in high mileage vehicle the secondary piston releases oil in high rpm. To prevent this blowby oil contaminating the intake manifold thus mixes with gasoline , lowering the octane level that causes pinging or hesitation. To install: PCV valve>PCV tubing>IN of Oil catch can>OUT>PCV tubing>intake manifold.
You need to clean the MAF and replace the spark plug.
Hesitation can also originate in the transmission I have this problem before, hesitation usually can be felt between 2nd going to 3rd gear (automatic). I resolved this by dropping the transmission pan, spray contact cleaner to the solenoid. I used Amsoil OE synthetic ATF. Ideally in high mileage VQ35DE, precat must be gutted and install 02 non-fouler to the two secondary sensor.

Clarifications
6 speed
Maf has been cleaned
Milage is 200000 ( bad conversion from 325000km)

Does any of the above result in intermittent operation?

Nother symptom is it's stalling on a warm start

Looking into scanners. Makes ones head spin

Are most scanners able to look up pending codes?
I can't seem to find that spec on the scanners (hand held or pc based)

Found my scanner maxiscan ms300
Literature says it reads pending codes
Wich there were none

Inspected the pcv hose. No oil

Engine was down on oil. Will monitor
Every day to see if it's using oil
