Throttle Sensitivity
I've noticed on my new SE (auto) that the throttle is very touchy. When I'm trying to drive slowly, in a parking lot for instance, I have a hard time keeping a steady, slow speed. Either the car is coasting or it's accelerating. Is there an adjustment on the throttle sensitivity so I have more control at low speeds?

HAHAHAH, I get this also... I try to pull out slowly at a light or backing up from my driveway, I most of the time knock my head back cause it goes like a bat out of hell... it really sinks you in the seat don't it.
this is something that I would leave just like that though, you never know when you will need it..

I don't have those problems because of my 6-speed. First gear is not so low that the Max jumps (without getting on the throttle). I'm more likely to have the engine stall because I don't give it enough gas when letting out the clutch in first.
In parking lots, I find that I do a lot of coasting (in neutral). IMO the manual is the best trannie -- even with the occasional stall. The direct connection to the engine in all gears gives me much better engine braking in the hills around here.

you just need to get used to driving a faster Maxima. 
When I first drove a rented 04 Sentra I had that problem, being used to an 88 Buick. but after owning my Max, another rented 04 Sentra felt too slow and non-responsive.
you'll get used to it and will learn to lightly tap the gas.

They mentioned how this is annoying in articles as well...its called throttle tip-in I believe. I personally like the feeling, Ive driven mercedes benzes that have more torque than this car but had a very modest tip-in and it gave an illusion the car was slower.
