Maxima 2017 Apple Carplay
Is there a workaround for the NISSAN SD CARD? I only need my apple carplay to work and don't need the maps(nissan) at all. Would the carplay work if a normal sd card was inserted?

No it will not. SD card is electrically integrated and thus needs to be coded by the dealer.
