Troubleshoot/setup new system

I got 3, JL8w0 speakers

I got amp as follows below:
Max power output @ 4 Ohm 1 x 650W
RMS power output @ 4 Ohm 1 x 310W
Max power output @ 2 Ohm 1 x 1000w
RMS power output @ 2 Ohm 1 x 500W
Load impedance 2-8 ohms

I want to wire my system in parallel and set the speakers to 8ohm resistance (Speakers can run at 4 or 8, not quite sure how you change it), so that I"m pushing 2.66ohz to the speakers. So it will be around 375 watts getting out, and around 125 watts to each speaker. Sounds great in theory right?

So here is my question, how can I get an idea how many watts are going to the speakers? Is there a formula/method I can use with a voltometer to measure it?

Another reason why I ask this question is my GF just setup a single 8 inch in her trunk, and I dont think she used thick enough wire for the connection from the AMP to the woofer (some friends used RCA Cable? How can this work at all?). Its not hitting very hard unless you really really turn up her factory system. And the gain on the amp is maxxed out. Any suggestions?

Thanks
