LCD questions

Ok long story short i am puttng a hidden laptop into the maxima so i can play winamp and such in the car. I plan to flush mount a lcd screen under the climate controls and move the HU where the pocket/flip lid drawer currently is. What i am not sure of is a few of the questions below, and i know some of you already have a setup like this in your car. I would also like the ability to put a PS2/XBox into the screen, and im not sure what kind of screen to get and what the cost is......so:

1) What size screen can i fit in here, and how does it actually mount? I can fabricate anything i need...
2) Do they make a screen with the a/V inputs for the console as well as the VGA input for the laptop?
3) Is touch screen the easiest solution for controlling the windows o/s and programs on the laptop?
4) what brand is best, and what price range are we talking?
5) opent o suggestions of any kind

I did some searching but the information is kind of overwhelming and the amount of brainpower in this forum is off the charts so i know you guys can help =]
