which direction do you have the air flowing?? Blowing onto the amps or sucking air away??

My amps have big *** fans in them blowing air out

No actually--->

my amps will be totally covered over I just don't want them to over-heat when my trunk is full.

Blow the air onto the amps, in the same direction that the cooling fins run, if you can.

The way I've got mine is that I have 4 fans total.. 2 on each side of the amp rack. One pair pushes air in, the other sucks it out the other side.
here's a pic of my ramp rack.. you can see the holes on either side for the air to flow through.. the fans themselves are in small "ducts" outside the visible part of the amprack.

12 volt computer cooling fans should do the trick, or some stereo places sell more specific fans that look like a long cylinders. Tap a smaller, fused line off your main power wire, ground to the chassis, and that should be it.
