How do you change the power steering fluid? What fluid should I use?

Can my car run without power steering belt?
I have a 2002 Infiniti I35 with a real bad power steering leak. Can i cut the power steering belt off and it not do damage to the rack and pinion? I know it will be harder to turn, but i plan on replacing the belt and getting the leak fixed. I need the car for work and plan on taking it in when i have a day off.
