When to change synthetic oil?

I go 5-7k on mobil 1 in all our cars, which may be a bit overkill. 80% highway miles. At that point I'm starting to need oil in the cars anyway (usually approaching 1 quart low) I figure if it needs a quart I might as well get it all.
One of my cars now has 140k on it, and it only uses 1/2 quart of oil in 7k miles!!! About the same as when new. Always used mobil 1 for 5-7k intervals.
Can't help with the AC question, I've never tracked it but it's safe to say it will lower MPG, I would say it knocks off about 0.5 - 1 MPG.
