OEM or aftermarket caliper and what is the core fee for parts?
My rears have been sticking should I rebuild and find a kit for that or seeing all the issues that some folks have had with the 5th gen rears, is there a good aftermarket brand to go with?
And then how much have you paid?
So hard to find a bargin without all the strings attached.
I mean all the core charge tells me is they want my old stuff to remanufacture and sell. Is this some dealer invented scheme or is this some sort of law for core charge? Know any place to avoid this bs?

Core Charges are normal for any part that a manufacturer wants back. The more they want it back the higher the core charge. It's not really anything out of your pocket since you get the money back anyways.
I'd go with OEM on the rear if it where mine, but I don't race my max either.
If you do go aftermarket make replace both. (Also if the piston size is different from OEM this could POTENTIALLY change the stopping ratio from front to rear tires.)
