I heard that installing 300zx calipers on Max would make the brake pedal spongy. Is this true? If so would the brake booster off 300ZX fit?

pedal will be spongy if you have air in the system. On the 4 piston Z caliper its easier to have air bubbles trapped and you have to bleed it a certain way to get it out if bubbles are trapped on opposite side of bleeder valve.

And...

it certainly wouldn't hurt to get a larger master cylinder I'd think, if you plan on utilizing the additional stopping power on a regular basis (ie, hard stops/decelerations often). Just a guess though.

larger is not always better. With a larger bore or master cylinder, sometimes youll get a low pedal cause it cant move enough brake fluid intiallly. Thats what a quick take up valve can help but i dont think the Max or 300ZX has.
