Maxima Won't Start - Electrical

I have a weird tale:
I was on a drivable beach and my 95 Maxima got completely stuck in the sand. The sand was halfway up the wheel wells. Once I tracked someone down to pull me out, the car wouldn't start. I knew it wasn't the battery because the lights didn't dim when I tried to turn it over. So here's what it's doing:

When you go to start it, it will not turn over at all. You hear one click and that's it. I though it was the starter, took the old one out and reinstalled, no dice. I crawled under to see if anything was obviously wrong, I didn't see anything. I ended up popping the clutch to get it started. Now that I'm home I brought a new starter, didn't resolve the issue. I checked all fuses and swapped some of the fusible links that have to do with starting, nothing. I checked the clutch switch by the pedal, bypassed that to see if it was faulty, no. Any ideas as to what it could be??

Ck grounds and crank sensors also add a ground from oil pan to bell housing then try to start it

All grounds are fine... I checked.

Is the click coming from under the hood (the starter) or under the dash (the ignition relay)?

Check the battery voltage (engine not running). It should be 12.25 - 12.5 volts. Keep monitoring the battery voltage and try to start the car. It should not drop below 11 volts.

Get the car started (however, jump start, push start) and check the voltage. Should be around 14 volts.

Let us know the results.

Update

Update:
I screwed up when installing the new starter and crossed the positive and negative - which is why the ney starter didn't work. I put the old one back in, which of course was dead. I re-installed the new starter correctly and it resolved my starting issue. NOW I fear I've damaged my electrical system, voltage reads anywhere from 12.3 to as low as 10.8 with the car running, I thought I damaged the alternator - replaced it to find out that the old one works fine! Had the battery checked, it's fine as well! All fuses are good and the grounds are hooked up?!

help!

How olds the battery? does it hold a charge? Are the battery pos and neg terminals clean/corrosion free? check the negative grounding point, sand down to bare metal if need be, or even add a second ground to a clean point/not necessary though. Tighten terminals, should not be able to move them.. And maybe check fuses under hood? My electrical knowledge is limited to big audio setups, but ya know..just throwin stuff out there, gl.

In the box by the battery, check the 2 big fusible links (fuses) with an ohmmeter. Also check the small fuse (7.5 amp) that the cover labels ALT.S.
