You can go safly up to a 50 shot on a stock engine (Wet Kit), but a dry kit anything above a 35 shot you want to upgrade the fuel pump. I have sprayed for more than 5 sec at a time, i would say its safe to spray up to 10 secs (wouldnt recomend it). For the jets there should be a guide in the instruction book, well there was one in mine which was NX. Hope you have fun with it. i know i have.

Here is my opinion/experience with nitrous.

I believe most kits, with experienced users can spray a 75 shot safely on a stock motor. There are some fuel upgrades that should be used for anything higher. I spray a 125 shot, on a stock motor. I have sprayed for up to 20 seconds at one time I am sure, but that is the extent of it. The selenoids can't handle anything much past that. I also hope when you say "hold thge button" your meaning your WOT switch, please let us see your setup before you spray...
