Here is the math I did: 48mm - 6mm (0.25in converted to mm --> this compensates for the narrower width of your wheels) = 42mm, which seems a tad high. My math could be slightly off though.
Unless you meant your actual wheel was rubbing, wheel width usually doesn't matter that much. +48 is still to high unless you run a really skinny tire like 215 or 205, although I don't know off the top of my head if you can even mount a tire that thin on a 7.5" wide wheel.
Best to use spacers. A 15mm spacer would be best and let you run those desirable 235 width tires, but would require you to change your wheel studs.

Most commonly run maximum size is 235/45, but I think people like Jeff have gotten away with 245/45 on his Stang wheels, which are roughly +32. You'd want 35-30mm offset to fit 235's. A 7.5" or 8" wheel will do.
I currently run 235/45 on a 17x7.5 with +35. It rubs the innner plastic fender a little bit on the passenger's side most likely from worn suspension (which I'm fixing now....) and because the actual measured width of my tires is wider than average for 235's.
