Side moldings...removal

hey guys...I'm thinking about removing my side moldings and when I get the car painted, but I haven't decided on whether to go with the 'shaved' look or put them back on. My question is if I wanted to shave them off, what should I use to fill up the space where they are at? Bodyfiller? or should I have some metal welded on then smooth it out? What do you think of painting them a nice gray/silver on a red max to match a gray/silver lining on the bottom of the car (its black now)?
